Just look at their desigation - basic, moderate, advanced.

Basic - Champion, Hunter, Guardian
Moderate - Minstrel, Captain, RK
Advanced - Burglar, LM, Warden

In terms of skills used, Hunters and Champions are probably the simplest.

Eh, you'll get used to it. At 58, I hardly ever use stealth anymore, despite traiting Quiet Knife. I just use the stance for bonus damage, or Gambler for the Evade bonus if I need to live longer.
