Most of Howard Shore, Hans Zimmer, Jeremy Soule and Inon Zur works. Some Two Steps from Hell.

Anyway, here's some new (and old) ones, in no special order:

I can listen to the Tron: Legacy OST back to front on endless repeat. Best time to do so is driving in a car at night.

    Any Suikoden fans here?

This "Celtic" cover of the Le Buque Village theme from Suikoden III is one of the best video game-derived pieces I've ever heard. The Celtic rendition of "Stupid Ducks" is also great :-)

I'm quite fond of the soundtracks from the Metal Gear Solid games, as well as anime series like .hack//SIGN, Puella Magi Madoka Magica, Cowboy Bebop, and Ghost in the Shell: Stand Alone Complex. (I think the universe would implode from sheer musical awesomeness if Yoko Kanno and Yuki Kajiura ever did a collaboration...)

Oh my. Either I've been playing too much or it's because of English not being my native language, but for some moments I honestly thought OST refers to places that start with "Ost" in The Lone-Lands... I was already thinking Ost Guruth probably wins. Facepalm.

But what comes to the original subject, I must say I love Howard Shore's music, aaand all kinds of epic sounding pieces such as
    - Imperial March in Star Wars (heh heh)
    - The Good the Bad and the Ugly-theme
    - The Last of the Mohicans-theme
    - Pirates of the Caribbean-theme (from the first movie)

A bit late to the game, but I have to throw Shadow of the Colossus into the ring here.

The game itself is incredible, but the music takes it to a whole 'nother level:
