The only way you can direct oveflow is by slotting the target virtue before getting vxp. If your slotted are all capped, it will go to lowest ranked unslotted (wit).
So lets say your slotted are capped, and say valour (unslotted) is earning and close to cap. You want fortitude getting the overflow. You need to slot fortitude before getting any more vxp. Once valour caps, you can switch your slotted back, and set fortitude to earning. A VERY cumbersome system, to say the least.

Or even simply allowing us to disable each virtue from gaining. That would work too.

There is a way to set any virtue you want to be the earning virtue, whether or not your slotted virtues are capped.
If you double-right click on a virtue's icon, it will set that virtue to 'earning'. it will normally also slot the virtue, but if you already have all of your virtue slots full (as most players have most of the time), it will just error that bit, but the clicked virtue will still become your earning virtue. it will be marked with green text saying so.
When you have a virtue marked as with the green 'earning' text, it will get all of your VXP regardless of whether it is slotted or not, and regardless of the ranks of your slotted virtues.
If your earning virtue caps, or reaches its current by-level cap, the overflow then heads into your Lowest Slotted Virtue.
After that, if all of your slotted virtues are capped, it goes to your Lowest Virtue Anywhere, which for most players is Wit.
Rider, Fighter, Virgin, Lover; Watcher, Chaser, Bearer of Pain.
Victim tormented, Abused and Broken; Rise from the ashes and Hunt once again.
And Vengeance Be Thy Oath.
I haven't noticed any change to the mechanics after the dot update.
The main advantage of the system ranking up the lowest ranked virtue when overflow occurs is that those who struggle with the simplest of game mechanics can ignore this system too. Their virtues will rise to cap on slotted then the VXP gets spread equally around all others. Minor management can favour a couple more to cap by re-slotting. It means you are not completely messing up your virtues if you did nothing, just not getting the best out of them. Also if ignoring game mechanics is your thing you're unlikely to be knocking out deeds that would push the limits and at a lower level start loosing VXP and sources for gaining VXP for later.
It's only if you are actually at all pro-active that it becomes a real headache at the lower levels and you risk compounding the disadvantage that's been dumped on you for starting late in the game.
