Can you appraise your equipped mount legendary and still use it or do you have to leave it as it is? thx

You can use any of your old LIs after appraisal/claiming; they just won't advance and can't be reforged. You also can't mix and match; only use new with new and old with old. Apparently bridles will be taken care of in a future update?
