I just found an Easter Egg in LOTRO.. is there a list of them somewhere?

I found the "smoking" and flying/getting "high" Easter Egg, where you smoke, and then looks like you are flying...
If you get on your horse, then smoke, then get off your horse, you appear to be flying!

What other Easter Eggs are there??

If I understand correctly what the OP said, it's not an Easter Egg. It's just a graphic glitch caused by using the /smoke emote & mounts. Your toon glitches in the mounted position so it looks like "you're flying".

I wish there was a deed for some of these things... have thought so since I found the snowman in Ered Luin's Vale of Thrain ( 17.7S 102.0 W ).

As far as that goes, I also wish there was a deed or collection for those obsolete special mob drops... like Iornaith's Mandibles, etc.

The Ered Luin Snowman was given a purpose for the Wedding I think. Part of a quest chain to go find him.

Don't forget the sandcastles. The first one is on a small island in Lake Evendim near Floid and Dewitt. And then there is one along the beach in the Cape of Belfalas housing. Then there is another on one of the islands in the mouths of Anduin in Central Gondor.

In north Bree ( 28.6S,52.4W ), there is a fellow stuck head-first in the hedge wall around Bree. Various NPCs, including someone at the top of the hill, have related things to say about it.

Only 2 I can remember off the top of my head are the squirrels dancing in a circle around a hobbit at the top of a mountain in Northern Breelands/North Downs and the Monty Python Holy Grail referenced Killer Rabbit near Ost Dunhoth.
