One of those big, horned bulls from Dunland would make a great mount.

    Unicorn mount perhaps,
Would be cool if there was maybe a tie-up with Coffee Stain Studios to ride a Lox (from their world) as a mount in this world.

Well, as it's a rhetorical question, I'll skip my serious answer options and go with...

    Wooden Tricycle / Bicycle.

Either modern bicycle or one of those early High Wheeler versions.

    Brandy: Cupcakes of Doom.
    Landro: Trueheart Companions.

A canoe! So I don't have to swim everytime I cross a lake or river.

Maybe donkeys. If we go to Harad, some missions/activities (maybe even group ones) involving Oliphaunts.

I was the person that originally requested it, years ago & i am sticking to it! I want a ostrich steed. Why? Well just look at how happy these people are when using them:
Also we can get ostrich carriages:
... & they are even viable as war ostrich for mounted combat. They are known to be very protective of its family. They have quite some kick & have you seeing the size of that beak?

How about Dwarf mounts? They're stout and sturdy and their little running legs would look funny as you perched on their shoulders

Well, the Ents talk slow, but they sure helped Merry and Pippin get through the forest quickly...
