    Put into storage cold and dark though he was an eater not a fighter.
    Couriers came and went at his word -- he led quick ones though not light on his feet,
    His second name came when he went through disaster looking good enough to eat.


    OK, I guess it's time to tell the answer for this one: it's Will Whitfoot, the Mayor of Michel Delving.

    Named because of white: "whit" in "Whitfoot" is derived from "white."
    Named again when he got whiter: after the Town Hole's ceiling fell in and covered him with chalk he was given the nickname "Flourdumpling."
    Put into storage: Lotho had him mprisoned in the Lockholes, which were formerly storage tunnels.
    He was an eater, not a fighter: Until he was imprisoned, he was the fattest Hobbit in the Westfarthing. (This is also why he was "not light on his feet.")
    Couriers and "quick ones:" he was the Postmaster and, by extension, head of the Quick Post.
    Went through disaster looking good enough to eat: another reference to the "Flourdumpling" incident.


    Here is another one that should be somewhat easier:
    Blood-stained, burned, slashed and cut, but still near my Lord I waited,
    Twenty years and four, in silent room, with years of dust freighted.
    At return of folk to ancestral home, by a Dwarf I was created,
    But this return was doomed to fail, to fall to enemy hated.
    So to Chamber I came and there I stayed 'til seen by another ill-fated --
    Stories I told and grief I brought but curiosity I sated.

    I believe your new riddle refers to the Book of Mazarbul, the journal of the dwarven expedition to reclaim Moria.
