At second glance, Elves seem more likely. I'm thinking the line about the sand means that they were Elves who had been in Valinor, but left it for some reason.

Sounds like Ents to me...they at one time beheld that which great Elflords/ladies( Galadriel, for example) also saw in the Blessed Realm, I believe. And certainly the "child-folk" were in awe of them.

The holly trees were planted in Eregion at the bridge that linked Moria with Hollin..
Greeted fond by foreign eyes, and in the Redbook inked,
The fellowship found Hollin a deserted but pleasant land because of the trees still there..

Gil-Galad planted them there I'm guessing? Don't really know..
Lingering only where great hope and inspiration truly rings,
Legolas says something like "The memory of the Elves lives on still in this land", and the trees are a part of that..

Ding ding ding, way to go sloth! The Mallorn trees originated in Aman, and grew on Tol Eressea. They were brought to Numenor by the elves, then gifted to Gil-Galad and Galadriel by the Numenorian king who was the subject of LA's riddle a few days ago. (hence the lines concerning the bridge, first then second then first, beyond the bend, and escorted by kings)
They grew primarily in Lothlorien, which means Dreamflower by the way, and a mallorn seed was given to Samwise which he planted in the Shire. Only by Galadriel's power was it able to grow there. I've always liked the description of the Mallorn trees, and hopefully once we get to see Lothlorien in-game they'll be quite impressive!

Okay I made one (my first). The rhythm is a bit odd and it will be terribly easy for all of you I'm sure but it was fun to do:
I’ve seen many pass over me;

That would be the Last Bridge. Not sure if it has another name, but that's what I've always seen it called.
